Whip the aqua faba with lemon juice until stiff peaks using a hand held electrical mixer or a standing mixer. Stream in the sugar little by little over the course of a few minutes.. 


Combine the almond meal, oat flour, baking powder and salt and fold into the aqua faba. Add in coconut oil, vanilla extract and raisins and stir gently until incorporated. Cover and set aside in the refrigerator for 30 minutes or more. 


Press out cookie shapes, place on a baking tray lined with baking paper or silicone mat and bake at 175C for 8-10 minutes. Or place on a dehydrator tray lined with mesh screen and dehydrate 8-10 hours.
