Ingredients

 

Here´s a great alternative to green juice or green smoothie. Part of it is cooked, but the leaves are blended in raw so all their nutrition and life force remains. Mint and peas go very nice together, and I also love how this soup makes me feel after eating, satisfied but still light and full of energy.

Sauté the leek in the olive oil until soft. Add the vegetable stock and bring to boil. Turn the heat off, then add the peas. They don´t need to boil, just thaw. Transfer to a blender and add mint, spinach, apple cider vinegar, lime juice, garlic, salt and pepper. Blend until smooth, then add the avocado and blend briefly until incorporated. Garnish with the herbs and veggies of your choice.

A LITTLE TIP

Experiment using other fresh herbs like dill, basil, cilantro or parsley for example. You can also add superfoods like spirulina or chlorella. Avocado can turn bitter if blended too long, so I add it at the end and only blend it briefly.
